WHAT HAPPENS AT THE MILL?

Kirimara Estate Coffee is milled at Socfinaf Coffee Mill in Ruiru. The mill processes outturns individually to produce different grades from each outturn while maintaining the lots intergrity.

The mill removes the parchment from the coffee and grades the beans by size and density.
Beans are graded by passing them over screens with holes of different diameters.
Each grade of each outturn is auctioned as a separate lot under the estate.

Kenya separates main grade coffee into the following grades;

AA = screen size of 7.2mm called screen 18.
AB = screen size of 6.35mm called screen 16.
PB = screen size of 4.75mm.
C = screen size of 3.96 called screen 14.
T = density separated from PBs and Cs.
TT = density separated from AAs and ABs.

The grade KENYA AA is perhaps the most recognized and prized Kenyan coffee. This perception of value is driven by the general belief that the larger, denser beans will produce the finest characteristics from any one outturn. The classification is a quality judgement based on appearance of the raw bean, the roasted bean and the taste in cup.
